Lemongrass, floral, chamomile, apple, lime. Nicely sweet, medium body. This coffee is co-fermented with lemongrass. While the lemongrass is present, it’s subtle. Its nothing like a java from Indonesia – it’s lighter, cleaner, fruitier and more floral.

“We subject the coffee beans to an abrupt change in temperature, helping to develop unique flavors in the beverage. This process is generally done by fermenting in a high temperature controlled environment, allowing the beans to transform and develop aromatic compounds.
After this fermentation period, which can vary between 12 and 24 hours depending on the ambient conditions and the flavor profile to be achieved, we perform a rapid cooling. This cooling not only brings out the desired flavors, but also helps to control future cup acidity.
Java is a variety that benefits from this process, known for its full body and distinctive flavor profile. Java Termoshock often exhibits notes of lemongrass, balanced acidity and sweet stone fruit nuances, with a delicate lingering residual. This, the combination of controlled fermentation and temperature changes allowed us to explore and enjoy the complexity of flavors in the cup.”
