Las Marias Wush Wush Washed Processing Method

In the pursuit of discovering native Ethiopian coffees grown in the highland of Colombian mountains, Jose Giraldo found an exotic variety that came from the Wush Wush region of Ethiopia (thus the name Wush Wush). What makes this variety special is the high level sweetness along with delicate floral notes and yellow fruits that dance perfectly in the cup…. And the cherry on the trees ripen in an orange color with nice stripes that makes it more interesting. This coffee undergoes a meticulous, multi-stage fermentation process designed to enhance clarity, acidity, and floral complexity, mixed out with the genetics. The process includes:

  1. Selective Harvesting: Cherries are picked at their ripest stage, ensuring a 20 Brix grade sugar level for optimal sweetness.
  2. First Fermentation: Whole cherries are placed in a closed tank for 120 hours, allowing a natural carbonic fermentation to develop deep elegant flavors.
  3. Drying: Once the fermentation is complete, the coffee carefully dried in raised African beds for approximately 45 days, ensuring a controlled temperature below 35°C to achieve a 10-11% moisture content.
