Ana Maria Donneys is a young producer that comes from a family of coffee producers. She is the 5th generation of her coffee producing family. She is a Q grader and co-founder of IWCA Colombia, (International Women Coffee Alliance). Ana has also worked with Edwin Norena of Campo Hermosa who is also well known for producing exceptional coffees.

Ana’s process represents a highly controlled and deliberate approach to coffee fermentation, designed to create maximum aromatic complexity and balanced sweetness. The method involves a long, oxygen-free (anaerobic) fermentation period inside sealed tanks filled with carbon dioxide. Phase one is 96 hours in cherry, and then the coffee is pulped and placed back in the tank for 24 more hours.
During this extended time, the yeast Saccharomyces cerevisiae (beer yeast) plays a central role. It drives what’s known as secondary metabolism, converting sugars into a wide range of esters and higher alcohols—the chemical compounds responsible for floral and fruity aromas. The result is a coffee with layered notes of rose, jasmine, strawberry, and cherry, achieving exceptional aromatic depth.
By intentionally adding a specific yeast strain, the fermentation stays clean and consistent. This prevents the production of unwanted acids, such as acetic or butyric acid, which can cause sour or unpleasant flavors. Instead, the process favors the creation of lactic and citric acids, which produce a bright, juicy acidity that complements the coffee’s natural sweetness.
