Important: there are some quakers in this coffee (I’m seeing 3-4% in my roasts.) With the quakers (unripe fruit) this isn’t a coffee I’d normally offer. It’s about an 84 cup with lemony notes and some bitterness on the finish – not bad, just not up to the level I’d normally offer. However, if you’re willing to put in the time to remove the quakers, the palette shifts towards orange and darker sugars, chocolate comes out a little and the bitterness on the finish goes away. Without quakers, this is about an 85.5 cup.
So if you’re doing smaller roasts and are willing to put in the time, I think this is a great value because its prices as an 84 cup.

This coffee was produced by the family of the rep who’s been hooking us up with many of the really interesting, unique and high end beans that have been available lately.
Producers Jesús Bedoya and Ángela Castaño approach coffee with care and sustainability. Their harvest and processing highlight elegant, sweet, and balanced profiles, always adapting to climate and environmental conditions.
From Bedoya: The harvest is meticulous and and takes place in two phases. The first ensures optimal picking, followed by a second round to verify cherry ripeness. We measure Brix levels and, depending on the climate, choose the most suitable processing method.
We have a small processing unit. Last year, we processed 80% as natural and 20% as honey and washed. Due to heavy rainfall, we expanded our drying beds. Our goal is to soon implement eco-friendly, waterless pulping.
We adapt our methods based on climate and coffee variety. All our varietals are washed, with Pink and Red Bourbon standing out in this method. These coffees offer the elegant profile of a classic Colombian washed—refined, sweet, and full-bodied, with notes reminiscent of liqueur and dried fruit.
Cherries undergo light fermentation for 24 hours before being rinsed, minimizing water use. At this stage, natural sugar breakdown makes mucilage removal easier, enhancing flavor clarity and balance.
